Grilled Pork Chops with Herb Butter

Pork chops

Olive oil

Garlic (minced)

Fresh Butter

Chopped Fresh herbs

INSTRUCTIONS

Instructions:

  1. Prepare the Herb Butter:
  • In a small bowl, combine the softened butter with minced garlic and chopped fresh herbs (rosemary, thyme, and sage). Use a fork or spoon to mix the ingredients until well combined. Adjust the amount of garlic and herbs according to your preference.
  1. Marinate the Pork Chops:
  • Place the pork chops in a shallow dish or resealable plastic bag.
  • Drizzle olive oil over the pork chops to coat them evenly.
  • Sprinkle minced garlic, chopped herbs, salt, and pepper over both sides of the pork chops, pressing gently to adhere the seasonings.
  • Cover the dish or seal the bag and refrigerate for at least 30 minutes to allow the flavors to infuse into the meat.
  1. Preheat the Grill:
  • Preheat your grill to medium-high heat (around 375-400°F or 190-200°C). Make sure the grates are clean and lightly oiled to prevent sticking.
  1. Grill the Pork Chops:
  • Remove the marinated pork chops from the refrigerator and let them sit at room temperature for about 10-15 minutes before grilling.
  • Place the pork chops on the preheated grill and cook for about 4-5 minutes per side, depending on the thickness of the chops, or until they reach an internal temperature of 145°F (63°C) for medium doneness.
  • Avoid pressing down on the pork chops with a spatula while grilling, as this can release juices and dry out the meat.
  • Once cooked, transfer the grilled pork chops to a plate and let them rest for a few minutes before serving.
  1. Serve with Herb Butter:
  • While the pork chops are resting, top each chop with a generous dollop of herb butter.
  • Allow the butter to melt slightly over the hot pork chops, infusing them with extra flavor.
  • Serve the grilled pork chops with herb butter alongside your favorite side dishes, such as roasted vegetables, mashed potatoes, or a fresh green salad.

Lemon Herb Grilled Chicken Breast

Ingredients

2 boneless chicken breasts

2 tablespoons olive oil

Zest and juice of 1 lemon

2 cloves garlic, minced

Oregano, Thyme & Salt

INSTRUCTIONS
  1. Marinate the Chicken:
  • In a bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper.
  • Place the chicken breasts in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, making sure it's evenly coated. Cover or seal and refrigerate for at least 30 minutes, or up to 4 hours.
  1. Preheat the Grill:
  • Preheat your grill to medium-high heat.
  1. Grill the Chicken:
  • Remove the marinated chicken breasts from the refrigerator and let them come to room temperature for about 10 minutes.
  • Grill the chicken breasts for about 6-8 minutes per side, or until they reach an internal temperature of 165°F (75°C) and are no longer pink in the center. Cooking time may vary depending on the thickness of the chicken breasts.
  • Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing.
  1. Prepare the Quinoa Salad:
  • In a medium saucepan, combine the rinsed quinoa and water or chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let it cool slightly.
  • In a large bowl, combine the cooked quinoa, diced cucumber, diced bell pepper, finely chopped red onion, chopped parsley, and crumbled feta cheese.
  • Drizzle the lemon juice and olive oil over the salad, and season with salt and pepper to taste. Toss gently to combine.
  1. Serve:
  • Slice the grilled chicken breasts and serve them with a generous portion of the quinoa salad on the side.
  • Garnish with additional fresh herbs or lemon wedges if desired.

Beef Steak with Mushroom Gravy

Ingredients

Beef cubed steak

1/2 cup all-purpose flour

8 ounces of mushrooms

1 Onion (sliced)

2 tablespoons vegetable oil

INSTRUCTIONS

Instructions:

  1. Season and Coat the Cubed Steaks:
  • Season both sides of the cubed steaks with salt and pepper.
  • Place the flour in a shallow dish. Dredge each cubed steak in the flour, shaking off any excess.
  1. Brown the Cubed Steaks:
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Once the oil is hot, add the cubed steaks to the skillet in a single layer. Cook for about 3-4 minutes on each side, or until they are golden brown. Remove the steaks from the skillet and set them aside.
  1. Saute the Onion, Mushrooms, and Garlic:
  • In the same skillet, add the sliced onion and mushrooms. Cook for 5-7 minutes, or until they are softened and lightly browned.
  • Add the minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.
  1. Make the Mushroom Gravy:
  • Return the browned cubed steaks to the skillet with the onion, mushrooms, and garlic.
  • In a small bowl, whisk together the beef broth, Worcestershire sauce, and 2 tablespoons of flour until smooth. Pour the mixture into the skillet.
  • Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for 10-15 minutes, or until the cubed steaks are cooked through and tender, and the gravy has thickened.
  1. Serve:
  • Transfer the steaks to serving plates and spoon the mushroom gravy over the top.
  • Garnish with chopped fresh parsley, if desired.
